Terroir

Dêmos comes from a selection of our finest terroirs on the granitic slopes of Gervans and Crozes-Hermitage. The vines, aged 35 to 70 years, benefit from south-western exposure and naturally produce concentrated grapes, giving the wine depth, complexity and length.

Winemaking

Vinified with minimal oenological inputs, with no enzymes and no fining agents. Aged in barrel to reveal the full complexity of the terroir and bring depth, finesse and ageing potential. Minimal sulphiting is carried out only at bottling.

Technical Specifications

100% Syrah. Certified Organic. Alcohol: 13% vol. Contains sulfites. Total SO₂: 30 mg/L. Format: 75 cl.

Tasting Notes

Delicate aromas of black fruit, violet and sweet spices, lifted by discreet oak. Silky and elegant on the palate, supported by lovely freshness and fine tannins that carry the tasting experience through a long finish.

Food Pairing

Pigeon with cherries, lamb tagine, Provençal beef stew, eggplant gratin with sweet spices, mushroom and cep lasagna, aged tomme or farmhouse Saint-Nectaire.

Serving & Cellaring

Serving temperature: 15 to 16°C. Decanting: recommended during the first years. Cellaring potential: enjoyable today, or cellar for 7 to 10 years in a cool cellar.

Winemaker's Notes

The Dêmos cuvée conveys a place through a vintage. 2023 was warm and relatively dry, resulting in a full, generous and harmonious wine that combines power, freshness and elegance. A cuvée that faithfully reflects the identity of our finest terroirs.

Certifications

Certified Organic estate since 2008. Minimal oenological inputs, manual work and soil-friendly practices, reduced environmental impact, lightweight bottles without capsules, recyclable materials and fair social practices. Guiding principle: respect for Nature, respect for People.
